Mixed mushroom pasta

A mix of mushrooms browned in butter and folded through pasta.

Prep 10 min · Cook 20 min · Serves 4

Cardboard harvest box filled with fresh mushrooms.

Ingredients

  • 400 g mixed mushrooms
  • 400 g pasta
  • 2 tbsp butter
  • 1 clove garlic, minced
  • Parmesan to finish
  • Salt, pepper, olive oil

Steps

  1. Brown mushrooms in batches in butter and oil.
  2. Cook pasta, reserving some pasta water.
  3. Toss mushrooms, garlic, and pasta with a splash of pasta water.
  4. Finish with parmesan and pepper.

Use whatever is in the Harvest Box — browning is the whole technique.
